Summer & Vietnamese food in Denmark
A warm and lovely summer vacation has just ended and i´m now back at work at LêLê.
I´m now full of good energy and the great joy I have over the fact that Vietnamese food has become so wellknown and popular today.
On my trip through Denmark I´ve visited Anholt and here I made a collaboration with the local food stall, Dellen, at Anholt Harbour. I made a special LêLê summer roll with five-spice marinated pork and fresh herbs – besides this I made an Anholt inspired Bao / fish burger.
There was a lot of people (from all over the country) stopping by to visit my vietnamese pop-up foodstall but the best of it all was the conversations I had with them – they were known to fish sauce, Vietnamese coriander, spices and Banh Mi. The queue was long and they all wanted my pop-up food stall to be permanent all through the summer and every summer.
My trip continued to the beach area of Tisvilde, which is a place I revisit every year. Here, with my friends, it has become a tradition to do our own summer rolls. It all started 5 years ago with 12 guests, grew to 20, 30 and now 50 guests. The table is typical decorated with beautiful grandma tablecloths, the vases filled with herbs, chopsticks and bowls for the many delicious Vietnamese sauces – 3 kinds of meat being marinated and placed on the grill while the vegetables and ricepaper are being placed on big trays.
And rolls being rolled till early morning, pure happiness.
It´s a lovely tradition for everyone to do, and the pure joy that comes with the vivid ambience, discussions around the table and new friends being made makes it all worth it. Every year more and more are embracing the vietnamese summer rolls and they´re continuing this tradition on their own with family. This makes me happy.
And I get so proud and touched when they tell me that they have all of my 3 cooking books, LêLês Gadekøkken, LêLês Grønne Køkken and LêLês Urtekøkken.
I´ll always voluntarily line up for a pop-up food stall, a dinner and making Vietnamese food if the chemistry, energy and enthusiasm are present,
